Kizuna
Every batch we run is written down to the second. Repeatability is not romantic, but it is what keeps the cup honest.
At Kizuna we tend to write the way we roast — slowly, and only when we have something worth saying. This piece began as a note passed around the cupping table and grew into something we wanted to share more widely.
The thread running through it is the one that runs through everything we do: that care compounds. Small, deliberate choices — at the farm, on the drying bed, at the drum, in your kitchen — add up to a cup that tastes like someone was paying attention.
We would rather explain our thinking than ask you to take it on faith. If you disagree, brew a cup and taste for yourself.
